Fillet of Pork on the BBQ

Absolutely Delicious
Pop along to your local butcher, buy 1 or more large Pork Fillets, cleaned and trimmed … slice down the middle and open,
 add one or two parallel shallow knife slices to widen, then blend a little olive oil and a squeezed lemon, salt, pepper, mixed herbs, add a little extra Oregano … marinate for 30 mins then add dry white wine with a few slices of lemon on top for 24 hours … pierce with a fork and turn occasionally so the wine soaks top and bottom … cook to medium rare on real charcoal, squeeze a little lemon and eat immediately … mmm!

Trust me, you’ll never taste anything like it !
