I've known the infamous consultant chef Louis Papageorgiou since he opened Di Capilla Seaside Stories in 2005.  It was my absolute pleasure to interview him, without a doubt one of Cyprus' finest chefs, this guy is seriously on another level.  These days, he's writing a new chapter, purely by accident, in 2010 he met and partnered up with Savvas, a master of hospitality, whom I've known since his Napa days in 1993 ... and together they started a new story ...

Every year we think it rained more and it's colder than last year, but I'm sure this year it did and it was. OMG How cold???  But you'd better not blink or you’ll miss spring, that’s the first two weeks of March, when the blossoms are out, floral aromas everywhere and everything is sooooo green … I just love it!

Romance in the air I thought January was never gonna end, coz you just have to love February in Cyprus!  Firstly coz it's the start of spring, on the island of Aphrodite, our Goddess of Love and naturally there's romance in the air, everywhere, especially on the 14th when we celebrate Valentine’s Day, which this year falls on a Saturday so you might as well make love all weekend! ... and I can't help laughing watching the postman struggle to get all my cards in the little letterbox. Based up on the West Coast, Rock FM play rock but it's a mix of soft rock & some 80’s Retro and of course all the Classics.  It's 24/7 with top presenters live on weekdays between 7 am and 7 pm, when it switches to non-stop music.  Oh, and you don’t have to be on the West Coast to tune in.  I often listen Online and I live on the East Coast; in my opinion, it’s a really cool station!

We thought you might appreciate a quick crash course in the basics of the local lingo, which is a sort of slang Greek, aka ‘Horthkatika’ which is basically a village Greek. Most of the locals speak English but they love it if you make an effort to speak their language. I do it in English phonetics so just read in English … Simples! … oh and don’t take it too seriously …
