Vangelis said he had extensive training in Naples, not at collage but at an academy at a traditional pizzeria, with top pizza chefs.  The rewards; pizzas as authentic as you can get this side of Italy, the dough, 4 simple ingredients, hand made, but fermented for 48 Hours before use, a Neapolitan influence, which enhances the flavour, then topped with your favourite toppings and baked to perfection in a traditional stone fired revolving oven ... the result a thin base with a light fluffy crust ... I recently caught up with Savvas, who, in my book, is one of the old school, around since before Napa became the clubbing capital of Europe.  He told me, "I got on my first motorbike when I was 12, and opened this bike rentals in 1992.  Over a lovely coffee, Savvas said, "We were renting out mostly those little 50cc bikes.  When Cyprus joined Europe in 2004, Quad Bikes and Buggies started flooding the rental market, so I launched, what became an excellent Quad Buggy Safari in 2012 ... These days we have over 150 Quads, Buggies, Scooters and Motor Bikes for rent with really cool prices ...
