These days he's got a crew of 30, most working as part of the family for years, and 'well oiled' is an understatement ... serving the best Cod and Haddock, and a nice bit of Plaice, imported from UK, Norway, Germany and France, deep fried in Lambros' crispy batter or breadcrumbs and served, of course, with chips made with Cyprus potatoes, pure heaven! ... opps, don't forget the mushy peas or maybe gravy, or curry sauce to dip your chips into and a few pickled onions and maybe a wally ... omg, old habits die hard oh, and almost forgot a good cuppa and a slice ... perfect!

To be honest if you'd asked me if I'd ever move to Cyprus in 1992 I'd have laughed at you but we stopped looking for excuses and decided to give it a go, moved in '93 and never looked back ... We now live in a country with one of the best climates in the world, long hot summers, short mild winters.  I believe it's the safest place with under 2 million population.  The Cypriots dote their children and live for the table.  We have several of the finest beaches in the world and I'd say the best sea I've ever had the pleasure to swim in ... so don't think about it just do it!!

It's all sort of lean-to-Tikki-style shack on the beach, all wood and lots of bamboo ... out front the aroma of freshly watered lush green grass lawns, a beach volleyball court, and outdoor seaview massage booths.  A gorgeous spacious veranda, covered with bamboo, creates delightful shaded patterns to enjoy your stay, with stunning sea views over Pernera Bay.  I love stuff like; Speis' handmade crisps shelf and the colourful signage on the wooden rails that run down the side of the cafe ... I love a new find ... this wonderful Bistro is set in the cobbled alleys at the top end of Old Town Paphos.  It's the dream of Soula and Aristos come true.  Soula has a love of cooking, especially 'sweet things' and now you can go and enjoy a little naughtiness in a quaint French Bistro style ambience, where everything just seems to slow down and stop, and all you have to think about is which coffee to choose !
