For the third year running it was the opening party of The Cyprus Rocks Festival at Aeyialos Beach Bar and Restaurant, in Protaras, just after the Thomas Cook collapse yet there were hundreds of traveling classic rock fans, joined by almost as many locals, enjoying the start of what was gonna be the best festival ever

First Nicole measured the distance exactly, then again, "measure twice, cut once" she whispered, a lady of my heart lol ... she carefully twisted the bottle putting a score mark around the base, just where we wanted it.  Then poured boiling hot water from the kettle onto the score on the bottle, and immediately put the bottle under cold running water to provide the stress shock to the glass and 'Ping' the bottoms dropped off ... it looked easy!

My initial interest was to find out about their gins, Aris explained, "it's what originally brought us back to Cyprus, 'to create a quality craft gin'.  Our initial inspiration was the aroma of The Troodos Mountains after a long dry summer when it first rains and we wanted to capture exactly that and put it in a bottle and we called it Aoratas Dry Gin which in fact last year won a gold medal.

It's a traditional Irish Bar, so authentic all the furniture was crafted in Ireland an imported over, lots of dark warm wood, benches and stools, cottage cabinets and red brick. Naturally I had to ask why Mambo’s, I joked, nothing to do with Nando’s?, he smiled and said "maybe" … explaining “if anything, we wanted to bring a new concept to the area, with a hint of a Mediterranean fusion with South America” … But I love the name, the décor very cool, the little touches here and there tells you know they mean business.  There’s a lovely long terrace on the sunny mornings side of the road, and indoors spacious for your parties … or those chilli winter nights …

This is where they excel, specialising in over 20 different choices of kebabs.  Gyros here is a choice of 4 meats, pork, chicken from Greece, beef and lamb from the UK, each cut into thin slices, layered and seasoned, and set onto big skewers ready to be imported.  Vangelis said, "I spend a little extra, but I get the very best" ... I asked "do you then add a little more seasoning" and he said "there's really no need", tbh, the beef Gyro was probably the best I've ever tasted ...
