Vangelis said he had extensive training in Naples, not at collage but at an academy at a traditional pizzeria, with top pizza chefs.  The rewards; pizzas as authentic as you can get this side of Italy, the dough, 4 simple ingredients, hand made, but fermented for 48 Hours before use, a Neapolitan influence, which enhances the flavour, then topped with your favourite toppings and baked to perfection in a traditional stone fired revolving oven ... the result a thin base with a light fluffy crust ... I have to say they're delicious!

My initial interest was to find out about their gins, Aris explained, "it's what originally brought us back to Cyprus, 'to create a quality craft gin'.  Our initial inspiration was the aroma of The Troodos Mountains after a long dry summer when it first rains and we wanted to capture exactly that and put it in a bottle and we called it Aoratas Dry Gin which in fact last year won a gold medal.

The place looks so welcoming, a spacious alfresco lounge under vines with comfy sofas and just inside on the covered terrace, tables immaculately set, pristine, polished wine glasses of various sizes ready for a fine selection of wines, inside is lounge, bistro style, clean and shiny, a well stocked bar with stools if you only want wine 😉 and unusually loos on the same floor, so not walking up and down stairs, very cool ! ... George showed me around the grounds explaining; "You can learn so much about marine life here, and rivers and swamps and the Penguins, the first ever in the Mediterranean region, naturally kept comfortable in the appropriate climate controlled environment".  Just watching one of their videos I amazingly learned that all Gold Fish don't have stomachs, so they have to keep eating, which means you should feed them small amounts 5 times a day, probably why I was never successful keeping one, but now I know!

To be honest if you'd asked me if I'd ever move to Cyprus in 1992 I'd have laughed at you but we stopped looking for excuses and decided to give it a go, moved in '93 and never looked back ... We now live in a country with one of the best climates in the world, long hot summers, short mild winters.  I believe it's the safest place with under 2 million population.  The Cypriots dote their children and live for the table.  We have several of the finest beaches in the world and I'd say the best sea I've ever had the pleasure to swim in ... so don't think about it just do it!!

With over 40 years experience in catering, it shows through, in the way Spiros has created his menus, he explained; "it’s my hobby to find new authentic recipes on the net, then I cook them, taste them, and I invite my chefs to taste, and if we all agree, the dish becomes a 'Special of the Day', until eventually it gets added to one of our menus!" … brilliant!

What's so special about these designs, is the hydraulic reclining system added to the designs of these chairs and sunbeds.  Taking a seat on the first set, a 6-seater, dining table, I have to say I was very impressed at how smooth the high-back seat reclined with just a push of the button.
